Ratatouille Alfredo

This was a new recipe for our family that I decided to try when I picked up an eggplant on sale for $1. We really enjoyed it. It was very filling has lots of great veggies and because it also had pasta, my 5 year old had not problems eating it.

Ingredients:
Spaghetti or Linguine noodles cooked
1 16 oz. jar Alfredo sauce
1 eggplant chopped
1 can diced tomatoes
1 bell pepper chopped
1/4 C. mushrooms chopped
1 garlic clove minced
1 tsp. Italian seasoning
Shredded Cheese

In a skillet cook eggplant and garlic in cooking oil until soft. Add bell pepper and mushrooms. Remove from heat add tomatoes and seasonings. Meanwhile place noodles in greased 9×13 dish. Pour alfredo sauce on top and mix. When vegetables are cooked add them on top of the noodles and top the whole thing off with shredded cheese. Cook in 350 degree oven about 12 minutes or until cheese is melted and bubbly.
